Buttered Pumpkin Mash w/Savoury MinceTuesday 4 June 2019 - By Thea
Savoury Mince Ingredients
- 1 tbl extra virgin olive oil
- 1 red onion, diced
- 3 garlic cloves, crushed
- 500g grass-fed beef mince
- 1 carrot, grated
- 1 zucchini, grated
- 1 small head broccoli, cut into florets
- 2 tablespoon tomato paste
- 400g crusted tomatoes
- 1 tsp chilli flakes
- 1 tsp paprika
- Pinch sea salt
- 1/4 cup parsley
Pumpkin Mash Ingredients
- 500g raw pumpkin, skin removed and cut into small pieces (kent pumpkin works really well for this recipe)
- 20g grass-fed butter
- Pinch of salt
To cook the Savoury Mince: In a frypan, add the olive oil, then add in onion and garlic. Cook for a few minutes until the onion has softened.
Add in the beef mince, break up with a large spoon and cook for five minutes.
Next, add in the carrot, zucchini, broccoli, tomato paste and crusted tomatoes. Stir until combined well.
Add in the chilli flakes, paprika and sea salt and pepper. Cook for a further 5-10 minutes until the broccoli is tender.
To cook the Pumpkin Mash: In a large saucepan, fill with hot water and add in the pumpkin. Bring to the boil for 10-15 minutes, until the pumpkin is tender (prick with a fork). Drain water, and while the pumpkin is still hot, add in the butter and sea salt. Mash with a fork until combined well.
Serve the Savoury Mince with the Pumpkin Mash and top with some parsley.
