Gluten Free & Nut Free Banana Bread

- By Thea

A deliciously healthy and easy banana bread that’s gluten free. This recipe is nut free and can also be made dairy free/vegan.

To make vegan: use chia eggs to replace the eggs (1 tbsp of chia seeds & 3 tbsp water makes one chia egg – leave it to soak in a cup for about 15 mins). Then simply swap out the honey for maple syrup, the greek yoghurt for coconut yoghurt and butter for coconut oil.

Ingredients (8-10 slices)

  • 2 eggs, lightly beaten
  • 1/3 cup grass-fed butter, melted
  • 1/3 cup honey
  • 2 medium ripe, mashed bananas (plus 1 extra for the topping)
  • 1/3 cup linseeds + 1 tbl extra for topping
  • 1/4 cup greek yoghurt
  • 1 tsp baking powder
  • 1 1/2 cups gluten free plain flour

Preheat the oven to 180ºC and line a loaf tin with baking paper.

In a large bowl add in the eggs, melted butter, honey and bananas. Mix to combine well, then add in the linseeds, greek yoghurt and mix again.

Finally, add in the baking powder and gluten free flour. Stir to combine.

Pour the mixture into the prepared loaf tin, slice the remaining banana in half and lay on top of the loaf, pressing down sightly to ensure the banana cooks into the loaf. Sprinkle with the remaining tablespoon of linseeds and place in the oven to cook for 40-50 minutes.

Test with a cake tester before removing from the oven. Allow to cool slightly, then cut into 8-10 slices.

This is really yummy toasted, then topped with tahini or nut butter of choice.
